One of my favourite spring recipes........

Put a handful of violet flowers (Viola odorata)
into a small glass with white sugar and let them dry. Grind the sugar-flower mixture with a motar.
You can use this seasoning to sweeten your desserts

  1. Oh, thank you for posting this, Jutta. It is such a sweet idea (in more ways then one :) and I think it must be food for the fairies! Also, violets happen to be high in vitamin C. I think I shall make this if I can find some violets. I wonder if one could use honey instead? And you reminded me of a violet poem I write:

    VIOLET LIGHT

    In the dark crevices
    of the rocks
    where moss grows
    in the deep recesses
    of the forests
    sweet violets
    lift shy faces
    to the sunlight
    filtering through
    the deep green needles
    and leaves
    of the tall trees
    reaching endlessly
    to the sun.

    The violets
    do not ask for much
    a lover's touch
    a quick caress
    whatever is leftover
    after the trees
    take their share
    of sunlight.

    The violets
    with their green
    leaf hearts
    hum with ecstasy
    they quiver
    and dress themselves
    in colors
    bright as the sun,
    pale as snow
    soft as lilacs
    deep purples
    rich and velvety
    as a queen’s robe.

    The tenderness of violets
    nearly breaks my heart.

    If you have also
    journeyed
    where the violets breathe
    if you have kneeled
    before their sweet simplicity
    and listened to their silent breaths
    then come look into my eyes
    be my lover
    and teach me
    to be thine.

  2. I so don't like typos. I wrote: And you reminded me of a violet poem I write:-- but I meant "I wrote"--I wrote a violet poem. :)
