Green Goddess Rice Salad

Today is the Indian New Year, so Happy Navaratti. It is also the first night of the 9 nights of the Goddess. So to celebrate, here is a recipe by Christine Waltermyer, author of Natural Vegan Kitchen. This salad is rich in chlorophyll, which is known to create that healthy glow in your skin. So make, eat it, and glow like a Goddess! Even guys can glow!
Ingredients:

-1 cup chopped, cooked leafy greens such as kale or arugula
-1/2 cup parsley sprigs
-1 cup cooked green peas
-2 scallions, chopped
-2 tablespoons olive oil
-2 tablespoons fresh lime juice
-1/4 teaspoon cayenne pepper (optional)
-3 cups cooked Organic Brown Mekong Flower Rice (or any other brown rice).
-a few pinches of sea salt (optional) (I like to use Himalayan salt)
-2 tablespoons finely diced red bell pepper, for garnish

Cook rice according to directions on package; (1 cup raw rice yields 3 cups cooked rice)

Place the leafy greens, parsley, green peas, scallions, olive oil, lime juice and optional cayenne pepper in a food processor. Pulse until finely chopped.

In a bowl, combine the cooked rice with the chopped greens mixture. Gently stir to combine.

Add optional sea salt if you wish.

Serve at room temperature or chilled, garnished with the red bell pepper.

Serves 4.
